A disclaimer before I begin: We don't eat like this all the time. Don't judge me!
Back when we were first married, most Saturday mornings we would go for a long run and then make something for breakfast - usually waffles, pancakes, or French toast. Fast forward 4 years... ever since Mother's Day when I got the Our Best Bites cookbook, this recipe for Puffed French Toast has been calling out to me. I really wanted to give it a try, but I couldn't come up with a good excuse. Finally I decided that I would make it after our Saturday morning run for old time's sake. Oh my goodness. It was unlike any other French toast I have ever had. So amazing. Of course it made way more than the 2 of us should ever eat, so we shared with a few of our neighbors.
Saturday night I took dinner to a family in our ward who just brought home a new little baby boy. Of course I couldn't just take them dinner. They needed dessert too. So I made some individual fruit pizzas.
And then Sunday night we went to dinner at my grandparent's house. I was in charge of dessert, so I made the dessert version of Our Best Bites' Stuffed Pizza Rolls. The recipe is in their cookbook, but not online. The recipe calls for shredded apples in the middle. I made most of them that way, but my mom doesn't like apples, so I made some with peaches. Those were even better than the apple ones, so next time I make them I think I'll do them all peach. I forgot to take a picture last night, so I took one before Rog and I polished off the leftovers tonight. It's a shame because they were so much prettier last night.
The past few days Corby has started showing a lot more interest in what we are eating. Saturday afternoon Rog was having some leftover spaghetti with chicken parmesan on the front porch while Corby played. Soon enough he came begging for a taste. He gobbled it right up. It has taken 5 months, but maybe now he is finally realizing food tastes good.
