Applesauce Cake

For our autumn desert this week we made Applesauce Cake. We discovered this recipe last October and it is one of our absolute favorites. The only problem is every time we make it the center falls. Maybe I'm just a bad cook, but I think it has something to do with the applesauce. (If anyone has a secret about how not to let the center fall, feel free to share. I won't be offended.) Anyway, even if it doesn't look all that pretty, it tastes awesome. You just have to make sure the center is cooked. Here is the recipe:

2 cups flour
1 cup sugar
1 cup brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 cup vegetable oil
1 cup applesauce
1 teaspoon vanilla
4 eggs
Vanilla frosting (I just use the Betty Crocker frosting)

Heat oven to 350 degrees. Grease 15x10x1-inch pan. In a large bowl, mix four, sugars, baking powder, baking soda, and cinnamon. Add oil, applesauce, vanilla, and eggs. Beat with electric mixer on low speed until smooth. Spread in pan. Bake 28 to 32 minutes or until toothpick inserted in center comes our clean and surface is deep golden brown. Let cool and then frost.
